Hi Steve! Well, I don't have a scientific answer for you, but I can answer your question from experience. For me, corn is a very strong trigger of MS symptoms. I have been on the diet for almost two years now, so I've been slowly experimenting with taking a snippet of trigger foods here and there. I don't eat a whole serving of any trigger foods, but a bite here and there makes me feel like I've had something fun sometimes. Anyway, corn is one of those trigger foods that I just cannot handle--at least not yet--if ever. I mean corn in all forms--corn on the cob--even a couple bites, corn chips, corn oil, corn syrup (in many, many things), corn cereals, corn meal (organic, whole grain, or otherwise, I've tried them all). Long story short for me is NO CORN. I find that it makes a big difference for me cognitively. Almost makes me feel woozy or a little slow minded. Anyway, I don't know what the direct relation of corn is to MS and the impact that it has on symptoms. . .all I know is that it DOES have an impact, and, for many, it has to be avoided. I hope this helps in some way! P.S.--Eggs seem to be another food that will never be tolerated--for me, but I'm okay with that one! I instantly ruin a good "streak" with even a few bites of eggs. A tasty plate of nachos, however, would be a delight! ; ) hahaha. . .oh well, maybe in another lifetime. . .
