Reaction to food

Hi, I'm trying to figure out exactly how much time passes after you have eaten a food item that you're sensitive to before you get a reaction. I know that everyone's reaction time is personal but I'd like to have a general idea.
Also does it matter the amount of food? Is MS triggered just by tasting a culprit food or do you have to eat lots of it?

I would have had never believed it, but finally after figuring out all the culprit foods and rotating everything so that I have no reaction or MS symptoms, the latest reaction came from the birth control pill!!!!
I've been going through the MS hug for about a month now (triggered from food and alcohol) and it takes long time for that symptom to go away, I hate it, it's like a python around my back ribs (thats if it doesnt extend all around). Few days ago I had to start a new birth control pill pack so I decided to take the pill every evening now instead of every morning, as I did for so many years... Of course by accident I missed one pill without even realizing it. Meanwhile the MS hug had almost disappeared (my back is just sore from all the stretching I do to relieve it)... Next day I took the pill (thats when I realized I had missed one) and oh wow, MS hug gripped me like I don't even know what! I was stretching and lying on the acupressure mat for hours after that.
I hadn't eaten any trigger foods prior to that! As a matter of fact I hadnt eaten or drank anything for few hours prior to the pill. It was clear what triggered the worsening of my symptom, a shame because it had almost healed!!!
Of course I started researching birth control pills and the Pill affects the cardiovascular system! (my friend had her lung collapse from those, she was 23yr old!) I've never thought the Pill affected me, but then I started it at 19 and my MS slowly showed after that. Not saying it was the cause, but it was a contributing factor.
If MS is a cardiovascular disease as the new CCSVI research shows or somehow your bloow flow plays a role in it, then definitely anything that affects it will play some role in your health. I got those pills for two reasons, one was birth control and the other to keep my iron levels higher (I have by nature low iron levels and felt fine but the doctor thought otherwise)... does the word iron and CCSVI ring a bell? We get buildup of iron in the brain coz our veins can't drain it out? Maybe I had low iron levels for a reason? I can only speculate now..

No more birth control pills for me, I quit the next day, slowly the MS hug is diappearing!!! Gonna use spermicide and fertility awareness method from now on, no more hormones for me!!!

Totally unexpected reaction occurred after eating Jackfruit! It was one piece of it, dried, no additives, no sugar. After half an hour my ears got blocked (as if I was on an airplane but u don't feel any pressure). And this time I noticed that I also can't hear that well soft sounds. The reaction lasted for 4 hours!!!
I decided to google on the net if hearing has anything to do with MS and it does. It is quite rare but people have reported a hearing loss, and I would too if I would have had eaten food I shouldn't continuously. I am lucky that right away my reaction goes to my ears getting blocked so I know easily that I have a reaction to that food. However during and a few months after my last relapse I reacted to bad food with other symptoms as well (tingling/burning feelings).
But not always do my ears get blocked to wrong food. Milk is one of them: I don't have any sensitivity or allergic reaction to it but continuous consumption of milk products bring out sensory symptoms (burning feeling). There's no reaction if I eat it rarely (every 3 days) and small amounts. I believe that is because I just cannot digest milk well or smth in it, so the bad stuff accumulates over time and then I react. If I eat it rarely maybe my body has time to clean itself meanwhile. This is just a hypothesis so far.

For me, reactions are within 5 minutes, at most maybe 15-20. For me, the amount doesn't have to be a lot, just a small amount. I've been on the diet 13 mos. now, so am trying slowly to test some things that I couldn't eat before, but very small amounts. The reaction time is still the same, if there is one....it's immediate. Reactions are different for each person, relating to their particular symptoms. For me, it's pain, tingling in my right foot. The only thing for me that I have to consume large quantities to produce reaction is fruit because of the fructose. I can tolerate moderate amounts, but too much or too concentrated such as the rare bit of juice, and I have symptoms, a sort of funny feeling around my eyes. Not sure how to describe it, but I recognize it as a glucose symptom with my personal tendency toward low-blood sugar. We're all different but that's my experience. Keep trying!

Chestnuts!!! It was

Chestnuts!!!

It was absolutely incredible. I bought some roasted chestnuts to take home and had only one. After about half an hour I started having a weird "restless" feeling in my right leg and it started burning. I was Xmas shopping during all this time, therefore walking, so I thought maybe my feet are getting tired. However I was pretty sure it was MS related, it felt like my right thigh muscle was reacting slower than usual.
I tried tensing my right thigh muscle at the same time as my left and there was a significant difference in the speed I was able to tense and release the right thigh muscle!!! And that lasted for about 4 hours. Then it disappeared without a trace, legs returned to normal.
I don't have a nut allergy, but then chestnuts aren't nuts as I read on the net. Also I believe I haven't eaten a chestnut for years, just never had the chance to. I remember I tasted a chocolate chestnut pie and really hated the taste so never ate it in the end.
The only explanation is that I have an abnormal immune reaction to chestnuts and that triggers MS symptoms. I am amazed that it only took one of them to produce such a strong reaction.
Maybe later I can experiment and eat another chestnut to see if I react again to it, but thats not happening anytime soon, I want a peaceful Xmas!!

How much does an ELISA test

How much does an ELISA test cost when it doesn't go through insurance? I can't imagine that insurance would pay for this in this situation.

I get a reaction very soon after ingestion, usually 20-30min. Somtimes about an hour depending on what i've eatin.

when i 1st started the diet

when i 1st started the diet i reacted quite quickly when i ate a suspe ct food usually spasms .but its been about 14 months and i have removed all reactive foods .i would suggest the elisa test 1st and a strong adherence to the guidelines in the book.be patient as the road to recovery is long and the years of abuse to our systems must be healed b4 true forward progresscan be made.
