Spelt and Kamut flour both seem to be a form of wheat yet they are listed as acceptable flour in the book. I tried rice flour and it does not work well at all for baking. Also the book uses aquave for a sweetner, I always read that honey is one of the most easily digested foods. How come we can't use honey? Finally any suggestions for nuts? I know we can't eat peanuts so I bought cashews only to discover they are processed in cottonseed and peanut oil. All of the nuts seem to be processed on machinery used to process peanuts. Is that a small enough exposure; to eat nuts that are processed on machinery used for peanuts?

I believe that there's a lil disclaimer in the book to be careful with spelt & kamut, and to only do so if you can tolerate it. e.g. I might be really sensitive to any amount of gluten, but you are not. So, I would want to avoid spelt & kamut, but you might be able to handle it in moderation.
About the nuts in peanut oil... it probably depends on how sensitive you are to it. I find that legumes are one of my highest sensitivities. So personally, I would run far away from any trace of peanut oil. As a heads up, I LOVE Chick-fil-A, but they cook EVERYTHING in peanut oil. I could not even eat a salad with chicken on top. :( Good luck!
My question concerns
My question concerns 'nutritional yeast' (brand : Marigold Engevita). I don't know what it is and am hoping someone does. Apparently it is different from baker's yeast and brewer's yeast. It is a good source of B vitamins, is vegan and vegetarian. It can also replace (Parmesan) cheese. As I am avoiding yeast (sensitivity) I am hoping I can eat this. Is anyone familiar with it? Thanks in advance!
