Spelt and Kamut flour both seem to be a form of wheat yet they are listed as acceptable flour in the book. I tried rice flour and it does not work well at all for baking. Also the book uses aquave for a sweetner, I always read that honey is one of the most easily digested foods. How come we can't use honey? Finally any suggestions for nuts? I know we can't eat peanuts so I bought cashews only to discover they are processed in cottonseed and peanut oil. All of the nuts seem to be processed on machinery used to process peanuts. Is that a small enough exposure; to eat nuts that are processed on machinery used for peanuts?

I've recently had an allergy test and it showed I have a wheat sensitivity so I cut out any products with wheat for a week (this includes wheat starch which is an additive to many foods). And surprise surprise, I ate pizza after the one week being wheat free and right away my left side started buzzing! I got constipated for 3 days and felt generally out of sorts for around 2 days!!!
I've followed the MS diet for about 2 years, however occasionally I ate a little piece of bread or candy or rice noodles (they contain wheat starch!!)! I've been lucky with no symptoms for almost 2 years until they came back as if out of nowhere. The allergy test opened my eyes, I've been ingesting a problematic food in very small amounts but still it caused an exacerbation in the long run.
And probably the reason why now I react so easily to wheat is because I consume it so rarely! (I did a repeat experiment after one week and same reaction happened) I think we become desensitized to problematic foods if we consume them often and get more sensitive to them if we eat them extremely rarely.
However the next time I eat anything with wheat will be only by accident, I'm avoiding it like the plague now.

cashews are a member of the legume class of ground nut like peanuts , avoid them if you are sensitive , i have too , as for sweetners , read the part of the book regarding leaky gut , this explains why all sweetners should be avoided for at least 6 months to allow the gut to heal , berrys are very low on the glycemic index so they should be fine , i didnt have any swrrtner for a year when i 1st started and now i am starting to recover . as for flour , they may have trace amounts of gluten which is bad for us , i hope this helps.
