I find it easy to digest. It's very high in protein. Try a filet mignon, grass fed bison. Tender and flavorful. So, I disagree with the above statement. I don't see it as an informed opinion.
Just be careful as the fat content of buffalo meat tends to be higher than fish, chicken or turkey (closer to beef). The leanest game meats are typically antelope, venison or elk. Venison and elk are easier to get, but I've found antelope at www.brokenarrowranch.com. Also, try to make sure they are wild or at least free ranging. No matter what the animal, if they are not moving and eating like wild animals, their fat content will go way up.
