Quick Meal Idea

Something that I put together for a semi-quick meal idea:
Line a sheet pan with foil. Put 6-7 turkey cutlets on the pan. Sprinkle cutlets with small amount of olive oil. Season with salt and pepper. Bake at 350 degrees for 20 minutes.While those are baking, poke a large sweet potato several times with a fork. Place in microwave and cook on high for five minutes. After five minutes, rotate potato and bake for another five minutes.Take out and let cool a little. Microwave a bag of mixed vegetables. I use the kind that has peas, carrots, corn and green beans. Put mixed vegetables in a casserole dish. Cut up four of the cutlets and add to vegetables. Scoop out sweet potato and mix in with turkey and vegetables. I also mix in some drained sun-dried tomatoes that have been julianned. Mix all together in casserole dish and enjoy. I prepare this for myself, since I am alone during the week. It will probably feed two to three people.
